This chilled sweet treat uses Greek yoghurt and white chocolate with a strawberry centre, then a coating of coconut and optional hazelnuts.

Allow at least two hours for the mixture to firm up in the fridge before shaping the balls. Keep them chilled until ready to serve.

Ingredients

Method

  1. Melt the white chocolate gently, then stir it into the Greek yoghurt.
  2. Mix in a few drops of vanilla essence and the protein powder until the mixture is smooth and thick.
  3. Leave the mixture in the fridge for about 2 hours, until it is firm and doughy enough to shape.
  4. Roll the mixture into balls, pressing a little chopped strawberry into the centre of each one.
  5. Roll the outside of each ball in dried coconut and, if using, chopped hazelnuts.
  6. Return the balls to the fridge and chill until firm before serving.
